Today I'm here with the famous Beijing snack - Bittern flapjack. This snack originated in South Cross Street of Beijing. It is said that during the Guangxu period， because it was expensive to cook with pancetta， people used pork head and pork offal instead. After the folk cooking masters spread the work， the bittern flapjack was created over time. The snack that I'm going to introduce to you is miancha(Seasoned millet mush).百度小吃Voice故事 Seasoned millet mush is a popular traditional snack with a special flavor in the Beijing-Tianjin region. Shanxi Jinzhong，有关北京的故事， Taiyuan and other places， also have a similar kind of seasoned millet mush. Seasoned millet mush is not tea soup， but millets cooked into a paste， and the surface is drizzled with sesame paste and salt. Sesame paste should be poured over the millet mush by lifting and pulling it into shreds and spinning it around. Drinking seasoned millet mush is very different from eating other traditional snacks. Fried pimples is a special fried noodle food in Beijing.人文北京 Fried pimples are dark yellow and green，which set off each other. It tastes soft， mellow and delicious.The founder of fried pimples was Mrs. Mu and her daughter . According to folk tales， in the early years of the Republic of China (1912)， a mother and daughter surnamed Mu opened a small noodle restaurant in Xuanwu District of Beijing. The business of this restaurant is bleak，so there will be a lot of flour left in the evening. So the mother and daughter divided them into small dough and fried them. It turned out that this dish was delicious. After that， the mother and daughter began to make this kind of fried pimples carefully， and gradually improved the ingredients， and finally created a special snack.Hundreds of years have passed， Fried pimples is still one of the favorite foods of people in Beijing.

Sweet ears is a kind of snack similar to Indian sugar cakes， which is called Jalebi.of People call it sweet ears because the dough is shaped like an ear， fried and eaten with brown sugar or honey. The honey will soak the whole “ear” and taste sweet， fragrant and crunchy. Notably， it is made all the year， except in summer. Because the temperature is too high， as a result， the syrup can not set well on the dough and it will affect the taste of the snack. Beijing Halal restaurants have the expression "Old Sanshun"， which means the three oldest restaurants in old Beijing city. The one on the east side features mutton hot pot， the one on the west side features roast duck， and the one on the south side is famous for various snacks， especially the sweet ears. Now， sweet ears are not only a special snack loved by the people in Beijing， but also a carrier of Beijing's traditional culture and history，有关北京故事， passed on with the times.
